Hi, LeRoy Kopp from New Horizons Healthy Foods here, just got done with an easy ten mile training run on the road.

Beautiful sunny day, you know its fairly nice when I only have one coat on, no hat and no gloves usually its three coats.

So anyways I haven’t given you a training update for awhile.  So I got a 40 miler scheduled for March 4th trail run, a 50 miler for May 12th and a 100 k for June 3rd.  I kind of took a few weeks off from running for awhile trying to let my Achilles injury heal up.  Plus I kind of went through a mental slump for awhile just bored and not really into it.  I go through those phases where I get bored of things, thats just me.

But I got to keep you inspired and I got goals so I’m out training.  I feel good but I don’t feel fast, got a pretty good training up this week. I don’t feel fast but I feel good.  I’m fueled by New Horizons Healthy Foods, hammering those fruits, vegetables, whole grains, legumes, nuts and seeds.  Avoiding those added oils, there is no such thing as a healthy oil no matter what anyone tells you.  I’m an athlete I don’t want to clog my arteries.  Pounding the antioxidants to help recovery, that’s the key to recovery.

So if you have health and fitness goals and I can help you out and tell you what to eat.  It’s not that a healthy diet is suddenly going to make you stronger or faster but it allows you to recover quicker, unclog your arteries so you can get more nutrients to your muscles.  It allows you to workout longer if you so choose and more consistently.

A lot of top athletes right now going plant based right now for the benefits.  They are shedding the weight, feeling lighter, feeling energized and recovering quicker.  Its my prediction that in another 5 years most of your top athletes will be plant based or otherwise they will probably start losing.  They won’t be able to compete cause its a big advantage.

    Hello, I was wondering if you knew the average weekly cost of switching to a plant-based diet? For example, if I bought only from you and the occasional Walmart and Trader Joe’s?

      Like any other diet a plant based diet can be expensive or very economical. For myself it has been economical as I center my diet around starches that are really inexpensive like potatoes, whole wheat, oatmeal, brown rice, beans. My premade meals average around $4.00 lb which is far more economical than most ready made meals out there. When I first switched to a plant based diet I spent around $150 a month, probably consuming 3000 calories a day but I made everything myself.
